This is just like the regular jollof rice but with coconut added. It is basmati rice cooked in tomatoes, peppers, herbs, spices and coconut milk. The coconut milk makes this dish a slightly milder version of jollof rice, however it still contains scotch bonnet peppers. This dish is great served with stewed beef or opt for stewed beans for a vegetarian main alternative to go with this dish. This is also great with some fried plantain.
