It is very similar to West Africa’s traditional stewed beans / beans porridge / red-red, but we have used red lentils instead of black eyed beans. This dish is not cooked using palm oil and in fact contains very little oil. We cook the red lentils in blended peppers & onions, along with plantain, yam, broccoli, cauliflower and carrots. This is a tasty dish low in calories but rich in protein, fibre and nutrients.
